About the Recipe

These cookies were always part of the Christmas baking that Principal Susan Smith's mom did when her and her siblings were kids.

Ingredients

  • 1 cup all-purpose flour

  • 1 ½ cup walnuts, very finely chopped

  • ¼ cup granulated sugar

  • Pinch kosher salt

  • 1 tsp pure vanilla extract

  • ½ cup butter, cubed and softened

  • 1 cup powdered sugar

Preparation

1. Preheat oven to 350° and line a large baking sheet with parchment paper. In a large bowl, mix flour, walnuts, granulated sugar, salt, and vanilla. Add butter and, using hands, combine mixture until it resembles coarse meal.


2. Form dough into small balls and place on a baking sheet. Bake 15 minutes, until cookies look dry but have not taken on any colour.


3. When still warm but cool enough to touch, roll cookies in powdered sugar. Place on a wire rack to cool completely. When cool, dust again in powdered sugar.
