About the Recipe

This is a staple after Christmas dinner for Lt.-Gen. the Honourable Andrew Leslie, one of our Senior Associate's here at Bluesky.

  • 4 Cups peeled fruit. Can be mixed wild berries, apples, apricots, raspberries etc, or any combo

  • 4 Tablespoons Maple syrup

  • 1 Tablespoon fresh lemon juice

  • ½ cup almond meal, or grind the almonds in your blender until  like powder

  • pinch of fine sea salt

  • ½ cup quinoa flakes

  • ½ teaspoon cardamon and cloves

  • 2 Tablespoons virgin olive or grapeseed oil

  1. Toss the fruit in shallow baking pan with 2 Tablespoons of the Maple syrup and lemon juice, mix

  2. Mix the ground almond or meal in a large bowl with the salt, quinoa flakes and cardamon

  3. To the bowl add the remaining two tablespoons of Maple syrup and olive or grapeseed oil, mix until combined

  4. Evenly crumble the mixture in the bowl over the fruit in the shallow pan

  5. Bake the pan at 400F or until the topping is light brown, around 20 to 25 minutes in most ovens.
